Cocoa cupcakes with an apricot heart

Soft cocoa cakes, filled with Fiordifrutta Apricots and decorated with a delicate robiola cream. A simple yet impressive dessert, perfect for parties and snack time, with an indulgent heart and a decoration that wins everyone over.

Ingredients

For the cupcakes 

  • 110 g self-raising flour
  • 50 g margarine
  • 70 g brown sugar
  • 2 eggs
  • 3 tablespoons low-fat plain yogurt
  • 15 g unsweetened cocoa powder
  • 1/4 teaspoon bourbon vanilla powder
  • 1 pinch of fine salt 

For the topping and filling 

  • 1 jar of Fiordifrutta Apricots Rigoni di Asiago
  • 1 tablespoon icing sugar
  • 150 g creamy cow’s milk robiola
  • small chocolate eggs, as needed  

Method

Thoroughly grease the silicone muffin moulds and place them on a baking tray. Preheat the oven to 180°C, conventional setting. Prepare the batter by whisking together the eggs, softened margarine and sugar, then add the yogurt and the flour sifted with the cocoa and vanilla; mix until smooth. Fill the moulds three-quarters full and bake for about 20 minutes, checking doneness with a toothpick. Leave the cakes to cool on a wire rack, then remove them from the moulds and cut the top in half. Make a hollow in the centre of each cupcake and fill it with Fiordifrutta Apricots. Prepare the cream by mixing the cream cheese, icing sugar and Fiordifrutta, then decorate the top of the cupcakes with the cream, half a cupcake top, chocolate eggs and, if you like, edible flowers for a special touch.
