Rose cake with Nocciolata L'Originale

Ingredients

For the dough 

  • 200g type 00 flour
  • 230g Manitoba flour
  • 2 eggs
  • 130g granulated sugar
  • 7g dry brewer's yeast
  • 150ml whole milk
  • 80g softened butter
  • a pinch of salt  

 For the filling  

  • 60g softened butter
  • 200g NOCCIOLATA L'ORIGINALE

 For brushing  

  • one egg yolk
  • to taste icing sugar (optional)  

Method

Pour the milk into the stand mixer. Add the flour sifted with the yeast and the sugar. Start kneading with the dough hook. Add the eggs one at a time and, while continuing to knead, add one knob of butter at a time.

Add a pinch of salt and continue kneading at medium speed for 15 minutes.  

Transfer the dough to a bowl, cover it with cling film and let it rest in the switched-off oven with the light on until doubled in size.  

Roll out the dough on a floured work surface, forming a rectangle. Spread the soft butter over the surface and then top with NOCCIOLATA L'ORIGINALE.  

Roll it up from the longer side and cut the log into pieces about 3 cm thick. Place them spaced apart in a 22 cm cake tin lined with baking paper. Cover with cling film and leave to rise for another hour.  

Brush with an egg yolk and bake in a conventional oven for 35 minutes at 160°C. If it browns too much after 25 minutes of baking, cover with foil. 

Remove from the oven, let cool completely and, if you like, dust with icing sugar.
